Shiitake Soup!
Super easy and super healthy! As a busy mom I need FAST FUEL. This is purr*fect for those cold days just before Spring... or during the months of Fall. Shiitake mushrooms make the base of any soup an immune boosting power house!

RECIPE: All ingredients are ** Organic **
(Takes under 30 minutes)
Shiitake Mushroom (whole cleaned)
Spring Water or other purified water
1 Head of Kale
1 Yellow Onion
Celtic Sea Salt
Extra Virgin Olive Oil
Unrefined Coconut Oil
What to do NEXT:
Place SHIITAKE MUSHROOMS in water and bring to a slow boil. Simmer on med heat for 15 minutes.
While shiitake mushrooms are cooking, take your KALE and YELLOW ONION and chop fine. Sauté in COCONUT OIL until lightly wilted. Toss with CELTIC SEA SALT.
Once the shiitake broth has slightly cooled, place ALL ingredients into Vita-Mix or other high powered blender and blend until creamy! Add another dash of Sea Salt (to taste), serve in your favorite bowl or mug and ENJOY!
KIDS ** make sure it is cool enough so that they can drink it with out burning their delicate mouths! ;-) I wait until it is luke warm and place into their favorite sippy cup. They LOVE!
