Organic⎮Vegan⎮Gluten Free⎮Low Glycemic⎮Superfood⎮Pancakes
One of the things I love most in this world is being able to eat delicious food that my sons devour and most importantly, is f***ing AMAZING for our body!
I knew from the get go that my sons wanted what mommy had, so I made a point to diversify their pallet at an early age. Now as toddlers my boys eat pretty much anything I put in front of them.
I have been on a mission to discover new ways to enjoy traditional foods that are infused with massive amounts of nutrition and these pancakes pack a punch!!! When I tasted them, it reminded me of the peanut butter cookies I used to eat as a young girl that my mom made...

What is awesome is watching my sons eat these pancakes and be so excited at how great they taste! At this age they have no idea how nutritious these organic, vegan, gluten free, low glycemic, superfood pancakes are, all they know is that they taste great!!!
Check out this super easy recipe:
- 1 Cup Organic Quinoa Flour
- ½ Cup Organic Coconut Milk
- ¼ Cup Organic Red Banana Powder (or substitute w a fresh banana)
- 3 TBL Flirty Superfood Mix by Sun & Moon Organics
- 1 TBL Organic Maca Powder
- 1 tsp Baking Powder
- ½ tsp Organic Stevia Leaf Powder
- 2 Droppers of Organic Stevia Liquid Sweetener
- ¼ tsp Celtic Sea Salt
Directions:
Place all dry ingredients into a bowl, add the coconut milk and stir until a nice thick and creamy texture. If you need to add more liquid in order to get the thick creamy texture, add it in small amounts, slowly.
Once everything is mixed well and you have the perfect consistency...
then, heat up the pan you will be cooking in. Use organic, unrefined, coconut oil and get the oil nice and hot before you begin your first round. You will know to flip the pancakes when the edges start to bubble and become a golden brown.
I let them cool a bit and place them on a plate for my kids to eat... the ONLY thing I add is more coconut oil. This saturated fat is healthy and amazing for the body. My twins eat the pancakes like they are cookies... it’s become a little joke, “Mommy’s making pancake cookies!! Yay!!” LOL
